Kit loves chicken enchiladas and I have never been that great at making them. Either way I make them, they are either too soggy or too dry. Low and behold, I found a new recipe that we loved. It was easy and Kit LOVED it. Guess where I found it:
On the back of the Costco cheese pack. And since we are HUGE fans of anything that Costco does, we made them.
Our family devoured 1/2 of a 9x13. We REALLY liked this recipe!
