We have been harvesting our zucchini and wanting to try new things with it. We came up with a recipe for fried zucchini and we all LOVED it!
Our Recipe:
1 large zucchini sliced in circles
4 Tablespoons plain breadcrumbs
2 eggs lightly beaten
4 Tablespoons flour
2 Teaspoons Santa Maria style seasoning
garlic salt to taste
5 Tablespoons of olive oil
Put flour, eggs, and bread crumbs in 3 separate bowls. Add 1 teaspoon of Santa Maria seasoning to both the flour and the bread crumbs. Sprinkle the sliced zucchini with the garlic salt.
Warm olive oil in a skillet.
Place zucchini on flour mixture, shake excess, dip in egg, and then the bread crumbs. Cook in olive oil until both sides are golden, approx. 2 minutes per side. Let cool on cooking rack. Serve warm with ranch or special sauce for dipping.
